About Kombucha SCOBY

A SCOBY (Symbiotic Culture of Bacteria and Yeast) is the living culture responsible for fermenting sweet tea into kombucha. It looks like a rubbery, jelly-like disc and contains beneficial bacteria and yeast that break down sugar and produce probiotics, organic acids, and carbonation.
If you’re not ready to brew immediately, store your SCOBY in a glass jar with at least one cup of starter liquid (previously brewed kombucha) at room temperature. Cover it with a breathable cloth to keep out contaminants. If storing for longer than a few weeks, you can refrigerate it in a SCOBY hotel with fresh sweet tea added occasionally.
Not necessarily! Your SCOBY may float, sink, or tilt sideways—it doesn't matter as long as fermentation is happening. A new SCOBY will often form on the surface of the liquid.
A healthy SCOBY can be reused for multiple batches and can last indefinitely if properly maintained. Over time, it will grow thicker, and older layers may turn darker. You can peel off and discard old layers when needed.
